Fit Recipe: Protein Cookies

Who out there has the nickname cookie monster?  Well, I do! And now that I’ve given you some great recipes from my private collection, it’s time to top any meal off with some satisfyingly healthy cookies. But don’t be fooled by the word healthy.  These things are delicious!

What you will need:

¼ cup coconut flour

1 cup oat flour

¼ cup stevia

1 cup egg whites

1 tsp. vanilla extract

1 tbsp. almond extract

1-2 scoops Beauty whey vanilla (depending how much protein you would like per serving)

¼ cup almond milk

2 tbsp. almond butter

4 tbsp. sugar-free vanilla pudding mix

Preheat your oven to 350 degrees. Put all dry ingredients in a large mixing bowl.  Melt almond butter in microwave for approximately 1 minute.  Add wet ingredients and almond butter mixing until a dough is formed.  **It will be hard to mix but use those muscles!

Line baking sheet with aluminum foil and spray with olive oil.  Place spoonful ball sized dough on to cookie sheet.  Bake for approx. 15 min.

TIP:  You can add any kind of flavor or mix to the cookies you’d like! Try adding some raisins, or stevia sweetened chocolate chips, or just leave them plain!!!
