Fit Recipe: High Protein-Low Carb Waffles

Hey ya’ll!!! so, we’ve covered a healthy snack and a nutritious dinner (if you haven’t checked out my protein mac and cheese… WHAT ARE YOU WAITING FOR!) Now, it’s time for my favorite meal of the day… breakfast!

Breakfast foods are the MVP of life! In the Bambody house, we eat breakfast for lunch, dinner, snack, and, oh yeah, breakfast too! This Low carb version of the waffle, one of my favorite foods, is perfect by itself or it can be topped with strawberries, Greek yogurt, or your favorite nut butter to hit your dietary goals.  Make sure to comment and let me know what recipes you want to see next to keep you saying, “it’s so good it can’t be healthy.”

What you will need:

1 whole egg

1 scoop Beautyfit Beauty Whey (I used vanilla but feel free to use whatever flavor is your favorite)

2 tbsp. PB2

1 tbsp. baking powder

Heat a waffle iron. If you don’t have a waffle iron, you can use the same recipe and cook in a skillet as a pancake. In a bowl, mix all ingredients.  You are going to add a TINY bit of water to make a batter like consistency.  BE CAREFUL TO NOT MAKE IT TOO WATERY.  Pour mixture onto waffle iron. Cook until golden brown.

Tip: if you accidentally add too much water, ITS OK! Just add double of everything and make it into 2 servings.

PRO TIP:  I ALWAYS make at least 5 at a time. Put them in baggies and it is the perfect meal for anytime of the day… especially those meals when you’re in a hurry and need to grab something quick and go.
